- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- Salt and freshly ground black pepper, to taste
- Chopped parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and cook until fragrant, about 30 seconds.
- Add shrimp and cook until pink, approximately 2-3 minutes per side.
- Meanwhile, steam or sauté asparagus until tender, about 5 minutes.
- Transfer asparagus to the skillet with shrimp, add lemon juice and zest, season with salt and pepper, and toss to combine.
- Garnish with chopped parsley and serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Can be served over rice or pasta for a more filling meal.
