- 2 pounds beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add beef chunks and brown on all sides. Remove and set aside.
- In the same pot, add chopped onion and garlic; sauté until translucent.
- Add browned beef, carrots, potatoes, thyme, rosemary, salt, and pepper. Stir to combine.
- Pour in beef broth, bring to a boil, then reduce heat to low. Cover and simmer for 2 hours until beef is tender.
- Garnish with chopped parsley before serving.
Notes
- For extra flavor, add a splash of red wine during simmering.
- Serve in themed cauldron bowls for a festive touch.
