Instructions
- In a small bowl, whisk together honey, lime juice, and lime zest.
- Heat olive oil in a skillet over medium heat. Add chicken slices, seasoning with salt and pepper.
- Cook chicken until browned and cooked through, about 5-7 minutes.
- Pour honey lime mixture over chicken and cook for an additional 2 minutes, coating the slices evenly.
- In a bowl, mix cooked rice with diced avocado and chopped cilantro.
- Serve the honey lime chicken slices over the avocado rice, garnished with lime wedges and extra cilantro if desired.
