  • 2 lbs boneless skinless chicken breasts, cubed
  • 2 large yellow onions, thinly sliced
  • 2 cups orzo pasta
  • 4 cups chicken stock
  • 1 cup shredded Gruyere or Swiss cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and butter over medium heat. Add sliced onions, salt, and thyme. Cook until caramelized, about 20 minutes.
  3. In a large mixing bowl, combine cubed chicken, cooked onions, orzo, chicken stock, salt, and pepper.
  4. Transfer mixture to a greased baking dish. Cover with foil.
  5. Bake for 25 minutes, then remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until cheese is bubbly and golden.
