- 2 lbs boneless skinless chicken breasts, cubed
- 2 large yellow onions, thinly sliced
- 2 cups orzo pasta
- 4 cups chicken stock
- 1 cup shredded Gruyere or Swiss cheese
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
- 1 tsp thyme
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and butter over medium heat. Add sliced onions, salt, and thyme. Cook until caramelized, about 20 minutes.
- In a large mixing bowl, combine cubed chicken, cooked onions, orzo, chicken stock, salt, and pepper.
- Transfer mixture to a greased baking dish. Cover with foil.
- Bake for 25 minutes, then remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until cheese is bubbly and golden.

- Ensure onions are caramelized well for deeper flavor.
- Feel free to add sautéed mushrooms or herbs for variation.
