- 1 package cheese tortellini
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups spinach leaves
- 1/2 cup grated Parmesan cheese
- 1 cup vegetable broth
- Fresh basil for garnish
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add cherry tomatoes and cook until slightly softened.
- Pour in vegetable broth and bring to a simmer.
- Add cooked tortellini and spinach, cook until spinach wilts.
- Sprinkle with Parmesan cheese and garnish with fresh basil before serving.
Notes
Feel free to add a splash of balsamic glaze for extra flavor or substitute spinach with kale or arugula.
