- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet.
- In the same skillet, add garlic and cook until fragrant, about 1 minute.
- Add bell peppers and zucchini, sauté until tender, about 5 minutes.
- Slice cooked chicken and return to the skillet with cherry tomatoes. Cook for another 2 minutes.
- Garnish with parsley and serve hot.
