Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
- Mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottoms of each muffin cup.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
- Stir in sour cream until well combined. Pour the filling over the crusts.
- Bake for 20-25 minutes or until centers are set. Cool completely before refrigerating for at least 2 hours.
- Garnish with fresh berries and mint leaves before serving.
