- 2 cups rotini pasta
- 1 lb grilled chicken breasts, sliced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine cooked pasta, grilled chicken slices, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with chopped parsley and serve chilled.
Notes
- You can substitute grilled chicken with cooked shrimp or tofu for variation.
- Chill the salad for at least 30 minutes before serving to enhance flavors.
