  • 2 cups rotini pasta
  • 1 lb grilled chicken breasts, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a large bowl, combine cooked pasta, grilled chicken slices, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss gently to combine.
