Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup cold unsalted butter, cubed
- 4-6 tablespoons ice water
- 5-6 large tart apples (like Granny Smith)
- 3/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
Instructions
- Mix flour, salt, and sugar in a large bowl. Cut in cold butter until mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until dough comes together. Divide into two discs, wrap, and chill for 30 minutes.
- Preheat oven to 425°F (220°C). Peel and slice apples, toss with lemon juice, sugar, cinnamon, and nutmeg.
- Roll out one dough disc on a floured surface and fit into a 9-inch pie pan. Fill with apple mixture.
- Roll out second disc and place over filling. Trim edges and crimp to seal. Cut slits on top for steam.
- Bake for 45-50 minutes until golden brown. Cool before serving.
Notes
- Use a mix of tart and sweet apples for best flavor.
- Chill the dough thoroughly to prevent shrinking.
- Brush crust with egg wash for a shiny finish.
