- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cups beef or vegetable broth
- 1 cup milk
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 small onion, diced
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 cup sour cream
- Fresh dill for garnish
Instructions
- Preheat oven to 375°F. Mix ground beef, bread crumbs, Parmesan, egg, salt, and pepper. Roll into small meatballs and bake for 20 minutes.
- In a large pot, melt butter and sauté onions, carrots, and celery until softened.
- Whisk flour into the vegetables and cook for 1 minute. Gradually add broth and milk, stirring until thickened.
- Add baked meatballs to the broth, simmer for 10 minutes.
- Stir in sour cream, adjust seasoning, and garnish with fresh dill before serving.
Notes
- You can use ground turkey or chicken for a lighter version.
- Serve with crusty bread for a complete meal.
