  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups beef or vegetable broth
  • 1 cup milk
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 cup sour cream
  • Fresh dill for garnish

Instructions

  1. Preheat oven to 375°F. Mix ground beef, bread crumbs, Parmesan, egg, salt, and pepper. Roll into small meatballs and bake for 20 minutes.
  2. In a large pot, melt butter and sauté onions, carrots, and celery until softened.
  3. Whisk flour into the vegetables and cook for 1 minute. Gradually add broth and milk, stirring until thickened.
  4. Add baked meatballs to the broth, simmer for 10 minutes.
  5. Stir in sour cream, adjust seasoning, and garnish with fresh dill before serving.
