- 1 pound ground turkey or beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups beef or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 8 lasagna noodles, broken into pieces
- 2 tablespoons tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add ground meat and cook until browned. Drain excess fat.
- Add chopped onion and garlic; sauté until translucent.
- Stir in diced tomatoes, tomato paste, basil, oregano, salt, and pepper. Pour in broth and bring to a boil.
- Add broken lasagna noodles; reduce heat and simmer until noodles are tender, about 10 minutes.
- Stir in ricotta cheese and half of the shredded mozzarella cheese. Cook until cheese melts and soup is creamy.
- Serve hot, topped with remaining mozzarella and fresh herbs if desired.
Notes
- You can substitute ground beef with ground turkey or chicken for a leaner option.
- For a vegetarian version, replace meat with cooked lentils or vegetables.
