Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix pumpkin puree, cottage cheese, honey, eggs, and oil until smooth.
- In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Distribute batter evenly into muffin cups, filling each 3/4 full.
- Bake for 20-25 minutes until golden and a toothpick inserted in the center comes out clean.
