- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated fresh turmeric or 1 teaspoon ground turmeric
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1 teaspoon ground black pepper
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic; sauté until translucent.
- Stir in turmeric and cook for 1 minute.
- Add diced chicken and cook until browned.
- Pour in chicken broth, add carrots, celery, and black pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot with fresh herbs on top.
