- 1 package of puff pastry sheets (thawed)
- 1 cup fresh cranberries
- 1/2 cup sugar
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 egg (beaten)
- Fresh mint for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix cranberries with 1/4 cup sugar and set aside.
- In a bowl, blend softened cream cheese, powdered sugar, and vanilla until smooth.
- Roll out puff pastry sheets on a floured surface. Spread cream cheese mixture evenly over the top.
- Sprinkle the cranberries evenly over the cream cheese layer.
- Roll the pastry tightly into a log and cut into 1-inch slices.
- Place the slices on the prepared baking sheet, seam side down. Brush with beaten egg.
- Bake for 15-20 minutes or until golden brown.
