Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- In a separate bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until combined. Fold in chopped apples.
- In a small bowl, mix sugar and cinnamon for coating.
- Shape dough into 1 1/2-inch balls, roll each in cinnamon sugar, and place on prepared baking sheets.
- Bake for 10-12 minutes until edges are golden. Cool on wire racks.
