Ingredients

  • 4 large bell peppers (red, yellow, or orange)
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a bowl, mix ricotta, mozzarella, garlic, basil, parsley, salt, and pepper.
  4. Stuff each pepper with the cheese mixture.
  5. Place stuffed peppers in a baking dish and drizzle with olive oil.
  6. Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
