- 4 large bell peppers (red, yellow, or orange)
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a bowl, mix ricotta, mozzarella, garlic, basil, parsley, salt, and pepper.
- Stuff each pepper with the cheese mixture.
- Place stuffed peppers in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
Notes
- You can add cooked quinoa or spinach to the stuffing for extra nutrition.
- Serve with a side salad or crusty bread for a complete meal.
