- 3 celery stalks, sliced
- 2 zucchini, chopped
- 4 cups vegetable broth
- 1 cup milk or plant-based milk
- Salt and pepper to taste

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions, carrots, and celery; cook until tender.
- Stir in zucchini and cook for another 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add milk, season with salt and pepper, and heat through.
- Serve hot, garnished with fresh herbs.
Notes
Feel free to add other vegetables like peas or spinach for variation. For a vegan version, use plant-based milk.
