- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup cherry tomatoes, halved
- Fresh basil for garnish
- Ray of crushed red pepper flakes (optional)
- 12 oz pasta (penne or fettuccine)
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté until fragrant.
- Pour in heavy cream, Parmesan, Italian seasoning, and crushed red pepper flakes; stir until smooth and heated through.
- Add cherry tomatoes and cooked chicken back to the skillet. Simmer for 5 minutes.
- Combine with cooked pasta, toss well, and garnish with fresh basil before serving.
Notes
- You can substitute chicken with shrimp or tofu for variation.
- Add a splash of lemon juice for extra brightness.
- Serve with garlic bread for a complete meal.
