- 1 pound Italian sausage, sliced
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, add diced onion and garlic, sauté until fragrant and translucent.
- Pour in chicken broth, bring to a boil, then add gnocchi. Cook until tender, about 3-4 minutes.
- Stir in heavy cream, cooked sausage, and chopped spinach. Season with salt and pepper. Simmer for 5 minutes.
- Serve hot, garnished with fresh herbs.

- Feel free to add more greens like kale or spinach for extra nutrients.
- You can substitute sausage with turkey or chicken for a lighter version.
