- 1 pound Italian sausage, crumbled
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups kale or spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, about 5-7 minutes.
- Add chopped onion and cook until translucent, about 3 minutes. Stir in garlic and cook for another minute.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Cook until heated through and slightly thickened.
- Add chopped kale or spinach and cook for 2-3 minutes until wilted.
- Serve hot, garnished with additional Parmesan if desired.
