- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can kidney beans, drained
- 1 can corn kernels, drained
- 1 cup heavy cream
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and minced garlic; cook until softened.
- Stir in beef broth, kidney beans, corn, chili powder, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream and cook until heated through, about 5 minutes.
- Serve hot, garnished with chopped green onions.
Notes
For a thicker soup, mash some beans before adding. Adjust spice level with more chili powder if desired.
