- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breast, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped green onions and fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned. Remove and set aside.
- In the same pot, add chopped onion and bell pepper. Sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper.
- Return the chicken to the pot, pour in chicken broth, and bring to a simmer. Cook for 10 minutes.
- Stir in heavy cream, cook for an additional 5 minutes until heated through.
- Garnish with chopped green onions and parsley before serving.
Notes
- Adjust spice level by adding more or less cayenne pepper.
- Use fresh herbs for a more vibrant flavor.
- Can be made ahead and reheated for leftovers.
