Ingredients

- 1 pound sausage ( Italian or your choice )
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 package (9 oz) tortellini
- 2 cups fresh spinach
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh Parmesan for serving
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Add chicken broth, diced tomatoes, dried herbs, salt, and pepper. Bring to a boil.
- Reduce heat, add sausage back to the pot and simmer for 10 minutes.
- Stir in tortellini and cook according to package instructions until tender, about 3-4 minutes.
- Add spinach and cook until wilted.
- Serve hot topped with freshly grated Parmesan.

- You can substitute sausage with ground beef or turkey for a leaner option.
- Use fresh herbs for a more vibrant flavor.
