Ingredients

  • 1 pound sausage ( Italian or your choice )
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 package (9 oz) tortellini
  • 2 cups fresh spinach
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh Parmesan for serving

Instructions

  1. In a large pot, cook sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Add chicken broth, diced tomatoes, dried herbs, salt, and pepper. Bring to a boil.
  4. Reduce heat, add sausage back to the pot and simmer for 10 minutes.
  5. Stir in tortellini and cook according to package instructions until tender, about 3-4 minutes.
  6. Add spinach and cook until wilted.
  7. Serve hot topped with freshly grated Parmesan.
