- 4 large potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded mozzarella cheese (for topping)
- 2 tablespoons chopped chives or parsley (for garnish)
Instructions
- Cook potatoes in boiling water until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper.
- Stir in shredded cheddar cheese until melted and combined.
- Preheat oven to 400°F (200°C). Form mashed potato mixture into small balls or puffs and place on a baking sheet lined with parchment paper.
- Sprinkle mozzarella cheese on top of each puff and bake for 15-20 minutes until golden and bubbly.
- Garnish with chopped chives or parsley before serving.
Notes
- For extra flavor, add garlic powder or paprika to the mashed potatoes.
- To make ahead, prepare and refrigerate the puffs before baking.
