- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, oil, eggs, and vanilla. Add to dry ingredients and stir until just combined.
- Gently fold in blueberries.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Pour half the batter into the pan, spread cream cheese mixture over it, then top with remaining batter.
- Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
Notes
- Use fresh blueberries for best flavor.
- Can substitute with frozen blueberries, but thaw and drain excess moisture.
- Storing leftovers in an airtight container keeps the bread moist for up to 2 days.
