- 2 lbs beef stew meat or chicken pieces
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 cup diced tomatoes (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Heat olive oil in a skillet and brown the meat on all sides.
- Add browned meat to the crockpot along with chopped vegetables, garlic, broth, and seasonings.
- Cover and cook on low for 6-8 hours or until meat is tender and flavors meld.
- Adjust seasoning as needed and garnish with fresh herbs before serving.
Notes
For a thicker stew, add a tablespoon of cornstarch mixed with cold water during the last 30 minutes of cooking. Feel free to customize with your favorite vegetables or spices.
