- ¼ cup fresh lemon juice
- Zest of 2 lemons

- ½ teaspoon baking powder
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Combine flour and powdered sugar in a bowl. Cut in cold, cubed butter until crumbly. Press into a greased 9×13-inch baking dish. Bake for 15 minutes until lightly golden.
- Whisk eggs, granulated sugar, lemon juice, and lemon zest in a bowl. Mix flour and baking powder in a separate bowl, then gradually add to the lemon mixture until smooth.
- Pour lemon filling over the pre-baked crust. Bake for an additional 20-25 minutes, until filling is set. Allow to cool completely, then dust with powdered sugar and cut into squares.
Notes
- For a extra crunch, add crushed graham crackers to the crust.
- Use fresh lemon juice for authentic flavor; bottled lemon juice may alter the taste.
- These bars can be stored at room temperature for 2 days or refrigerated for up to a week.
