  • ½ cup powdered sugar
  • ½ cup unsalted butter, cold and cubed
  • 3 large eggs
  • 1 ½ cups granulated sugar
  • ¼ cup fresh lemon juice
  • Zest of 2 lemons
  • ¼ cup all-purpose flour (additional)
  • ½ teaspoon baking powder
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Combine flour and powdered sugar in a bowl. Cut in cold, cubed butter until crumbly. Press into a greased 9×13-inch baking dish. Bake for 15 minutes until lightly golden.
  2. Whisk eggs, granulated sugar, lemon juice, and lemon zest in a bowl. Mix flour and baking powder in a separate bowl, then gradually add to the lemon mixture until smooth.
  3. Pour lemon filling over the pre-baked crust. Bake for an additional 20-25 minutes, until filling is set. Allow to cool completely, then dust with powdered sugar and cut into squares.
