  • 1 ½ cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour and powdered sugar. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of a greased 9×13-inch baking pan. Bake for 15 minutes or until lightly golden.
  2. While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and flour in a separate bowl. Mix until smooth and thoroughly combined. Pour this filling over the pre-baked crust once it’s out of the oven.
  3. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly puffed around the edges. Remove from the oven and let it cool completely in the pan before slicing into bars. Dust with powdered sugar before serving if desired.
