- 1 pound chicken breast or thighs, cubed
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup diced potatoes
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat and add a little oil.
- Sauté onion, garlic, carrots, and celery until tender.
- Add chicken cubes and cook until browned.
- Pour in chicken broth, add potatoes and thyme, and bring to a boil.
- Reduce heat and let simmer for 25-30 minutes until flavors meld.
- Season with salt and pepper, garnish with parsley, and serve hot.
Notes
- For extra flavor, add a splash of lemon juice before serving.
- This soup can be made ahead and reheated easily.
