Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or baking dish.
- In a large bowl, whisk together mashed bananas, eggs, vanilla extract, and melted butter until smooth and well combined.
- In a separate bowl, sift together flour, baking soda, salt, and sugar. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- In a small bowl, combine brown sugar, flour, and cinnamon. Add cold cubed butter and blend using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
