Ingredients
Scale
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups beef or chicken broth
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 2 tbsp tomato ketchup
- 1 tbsp mustard
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional toppings: chopped pickles, sliced tomatoes, green onions
Instructions
- Heat a high-quality skillet or frying pan over medium heat. Add 2 tablespoons of olive oil, then sauté the diced onion and minced garlic until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes. Season with salt and pepper. Drain excess fat if necessary.
- Stir in the orzo pasta, then pour in the broth. Add the tomato ketchup and mustard, stirring well. Bring to a boil, then reduce heat to low, cover, and simmer for 12 minutes or until orzo is tender and liquid is mostly absorbed.
- Stir in the shredded cheddar and mozzarella cheeses until melted and creamy. Garnish with optional toppings like chopped pickles or green onions for extra flavor.
Notes
- For a healthier variation, use lean ground turkey or chicken instead of beef.
- Feel free to add chopped pickles or sliced tomatoes on top for extra flavor.
- To make it gluten-free, substitute with gluten-free orzo pasta.
- Adjust seasoning and cheese quantities based on taste preference.
