- 2 lbs ripe tomatoes, quartered
- 3 cloves garlic, smashed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup vegetable broth
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Spread tomatoes and garlic on a baking sheet. Drizzle with olive oil, salt, and pepper.
- Roast for 25-30 minutes until tomatoes are soft and caramelized.
- Transfer roasted tomatoes and garlic to a blender. Add vegetable broth and blend until smooth.
- Pour into a pot and heat through. Garnish with fresh basil before serving.
Notes
- Use ripe tomatoes for the best flavor. Adjust seasoning to taste.
- Can be refrigerated for up to 3 days or frozen for later use.
