Instructions
- In a large mixing bowl, combine cottage cheese, flour, baking powder, salt, and optional herbs or spices. Mix thoroughly to form a dough.
- Divide the dough into equal portions and shape each into a ball. Flatten into a disc about 1/4 inch thick.
- Heat a skillet over medium heat, lightly greased with olive oil or cooking spray. Cook each flatbread for 2-3 minutes per side until golden brown, or bake at 375°F (190°C) for approximately 15 minutes.
Notes
- Allow flatbreads to cool completely before storing in an airtight container or zip-top bag.
- Store in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in a skillet or oven before serving.
