- 1 lb smoked sausage, sliced
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions
- Peel and dice the potatoes into bite-sized pieces. Slice the smoked sausage into thin rounds. Preheat your oven to 400°F (200°C).
- In a large bowl, combine potatoes, sausage, olive oil, garlic powder, salt, and pepper. Toss until well coated. Spread on a parchment-lined baking sheet and roast for 25 minutes or until golden and tender.
- Remove from oven. Stir cooked potatoes and sausage with ranch seasoning mix and sour cream until evenly coated.
- Transfer to a baking dish. Sprinkle shredded cheddar cheese on top. Bake for an additional 10 minutes until cheese is melted and bubbly.
- Garnish with chopped parsley before serving. Serve hot as a hearty meal or side dish.

- For extra flavor, add a dash of hot sauce or chopped fresh herbs.
- You can substitute cauliflower florets to make it keto-friendly.
