- 1 lb smoked sausage, sliced
- 4 large russet potatoes, diced
- 1 cup shredded cheddar cheese
- ½ cup ranch dressing or ranch seasoning mix
- ¼ cup sour cream (optional for extra creaminess)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C) and prepare the potatoes and sausage by dicing and slicing respectively, then toss with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the seasoned potatoes and sausage on a baking sheet lined with parchment paper. Roast for 25-30 minutes, tossing halfway through, until golden and crispy.
- Transfer roasted mixture to a large bowl. Add ranch dressing (or ranch seasoning) and sour cream, then mix well. Stir in shredded cheddar cheese until evenly distributed. Sprinkle extra cheese on top if desired.
- Transfer to a baking dish if necessary, and bake at 400°F (200°C) for an additional 10 minutes until bubbly and melted. Garnish with chopped parsley before serving.
