- 1 lb cooked chicken breast, shredded
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup diced bell peppers
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
- Sliced avocado and shredded cheese for topping
Instructions
- Heat a large pot over medium heat and sauté onions and garlic until fragrant.
- Add diced bell peppers, cumin, chili powder, salt, and pepper. Cook for 5 minutes.
- Pour in chicken broth and diced tomatoes. Bring to a simmer.
- Add shredded chicken and cook for another 10 minutes.
- Serve hot garnished with fresh cilantro, avocado slices, and cheese.

- You can substitute cooked turkey or beef for chicken.
- For extra spice, add a dash of hot sauce or jalapeños.
