Ingredients
Scale
- 1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano or Italian seasoning
- Salt and freshly ground black pepper, to taste
- Wooden or metal skewers
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, Parmesan cheese, oregano, salt, and pepper. Mix well to create the marinade.
- Add chicken pieces to the marinade, ensuring even coating. Cover and refrigerate for at least 30 minutes.
- Thread the marinated chicken onto skewers, leaving some space between pieces.
- Preheat grill to medium-high heat. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until fully cooked and charred.
- Remove skewers from the grill. Garnish with additional Parmesan cheese and chopped parsley if desired. Serve hot.
Notes
- For extra flavor, marinate the chicken for up to 2 hours.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- You can substitute chicken breasts for thighs, but thighs tend to be more tender and flavorful.
- To bake, preheat oven to 400°F and bake on a lined baking sheet for 15-20 minutes.
