- 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 3 tbsp unsalted butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tbsp tomato paste
- 1 cup tomato sauce or crushed tomatoes
- 1 cup heavy cream or coconut milk for a dairy-free version
- 2 tsp garam masala
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked basmati rice or naan for serving
Instructions
- Season the chicken pieces with salt, pepper, and a pinch of paprika. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of butter. Sauté the chopped onion until translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the tomato paste, garam masala, cumin, paprika, turmeric, and a pinch of salt. Cook for about 2 minutes to release the spices’ aroma. Pour in the tomato sauce and stir well.
- Reduce the heat and stir in the heavy cream or coconut milk for a rich, creamy texture. Return the cooked chicken to the skillet, combining thoroughly. Simmer for 10 minutes to let flavors meld.
- Serve the golden butter chicken over fluffy basmati rice or with warm naan bread. Garnish with chopped fresh cilantro for added freshness and flavor.
