Golden Butter Chicken is a quick and flavorful weeknight dinner favorite that combines tender chicken, creamy sauce, and aromatic spices. Perfect for those seeking an easy homemade curry that’s rich, satisfying, and loaded with flavor. This golden butter chicken recipe is ideal for beginner cooks and seasoned chefs alike, offering a delicious meal in under 40 minutes.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 3 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp tomato paste
  • 1 cup tomato sauce or crushed tomatoes
  • 1 cup heavy cream or coconut milk for a dairy-free version
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked basmati rice or naan for serving

Instructions

  1. Season the chicken pieces with salt, pepper, and a pinch of paprika. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken and cook until browned and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining 1 tablespoon of butter. Sauté the chopped onion until translucent. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in the tomato paste, garam masala, cumin, paprika, turmeric, and a pinch of salt. Cook for about 2 minutes to release the spices’ aroma. Pour in the tomato sauce and stir well.
  4. Reduce the heat and stir in the heavy cream or coconut milk for a rich, creamy texture. Return the cooked chicken to the skillet, combining thoroughly. Simmer for 10 minutes to let flavors meld.
  5. Serve the golden butter chicken over fluffy basmati rice or with warm naan bread. Garnish with chopped fresh cilantro for added freshness and flavor.

Notes

  • Adjust spice levels according to your preference
  • Use full-fat cream for a richer dish, or coconut milk for a dairy-free alternative
  • For extra flavor, marinate the chicken in yogurt and spices beforehand
  • Simmer gently to prevent the sauce from curdling
