- 2 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- Cinnamon sugar (for coating)

Instructions
- Combine water, unsalted butter, granulated sugar, and salt in a medium saucepan. Bring to a boil over medium heat, stirring occasionally.
- Remove from heat and stir in the all-purpose flour until a dough forms and pulls away from the sides of the pan.
- Allow the dough to cool for a few minutes, then beat in the eggs and vanilla extract one at a time until smooth.
- Transfer the dough to a piping bag fitted with a star tip. Pipe small churro-shaped bites onto a parchment-lined baking sheet.
- Preheat your oven to 375°F (190°C). Bake the churro bites for 15-18 minutes until golden and crispy.
- While still warm, roll the baked churros in cinnamon sugar. Serve immediately with optional chocolate or caramel drizzle.
Notes
- For a vegan version, substitute eggs with unsweetened applesauce or egg replacer.
- Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in an air fryer or oven to restore crunchiness.
