  • Total Time: 1 hour 15 minutes
  • Yield: 1 loaf (8-10 slices)

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon instant espresso powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional but recommended)
  • Vanilla extract for extra flavor

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, espresso powder, baking soda, and salt.
  3. In a large bowl, mash bananas until smooth. Add melted butter, sugar, eggs, and vanilla extract. Mix well.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Stir in chocolate chips if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas for the best natural sweetness.
  • Ensure espresso powder is fully dissolved to enhance the coffee flavor.
  • Allow the bread to cool completely before slicing to maintain its moist texture.
  • Optional: sprinkle with sea salt on top before baking for added flavor.
