- 1 lb (450g) pasta (penne, rotini, or your favorite shape)
- 2 cups cooked chicken, shredded or diced
- 6 slices bacon, cooked and crumbled
- 1 cup ranch dressing
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved (optional)
- Fresh parsley for garnish
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and set aside.
- In a large skillet, cook the bacon slices over medium heat until crispy. Remove and crumble once cooled, reserving some bacon drippings.
- Add olive oil to the skillet, sauté minced garlic until fragrant (about 1 minute). Add cooked chicken, season with salt and pepper, and warm through.
- Reduce heat to low, stir in ranch dressing, mozzarella, and Parmesan cheese until smooth and creamy. Add cooked pasta and toss well. For extra flavor, toss in halved cherry tomatoes.
- Sprinkle crumbled bacon over the pasta and garnish with chopped parsley. Serve immediately.
