- 400g (14 oz) of fresh or frozen tortellini (cheese or spinach-flavored)
- 300g (10.5 oz) of peeled and deveined shrimp
- 2 cups of fresh spinach leaves
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- Salt and freshly ground black pepper, to taste
- Red pepper flakes (optional, for heat)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp, season with salt, pepper, and red pepper flakes if desired. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add butter and spinach. Cook for 2-3 minutes until wilted.
- While preparing the shrimp and spinach, cook the tortellini in boiling salted water according to package instructions. Drain and reserve about 1 cup of pasta water.
- Pour heavy cream into the skillet with the spinach and bring to a simmer. Add grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, add reserved pasta water to adjust consistency.
- Return shrimp and spinach to the skillet, stirring to combine.
- Add the cooked tortellini to the skillet, tossing gently to coat everything evenly. Season with salt and pepper as needed.
- Garnish with chopped parsley and serve immediately.
