  • 300g (10.5 oz) of peeled and deveined shrimp
  • 2 cups of fresh spinach leaves
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Salt and freshly ground black pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp, season with salt, pepper, and red pepper flakes if desired. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. In the same skillet, add butter and spinach. Cook for 2-3 minutes until wilted.
  4. While preparing the shrimp and spinach, cook the tortellini in boiling salted water according to package instructions. Drain and reserve about 1 cup of pasta water.
  5. Pour heavy cream into the skillet with the spinach and bring to a simmer. Add grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, add reserved pasta water to adjust consistency.
  6. Return shrimp and spinach to the skillet, stirring to combine.
  7. Add the cooked tortellini to the skillet, tossing gently to coat everything evenly. Season with salt and pepper as needed.
  8. Garnish with chopped parsley and serve immediately.
