Ingredients
Scale
- 1 cup corn kernels (fresh or frozen, drained)
- 1 cup all-purpose flour
- ½ cup shredded mozzarella or cheddar cheese
- 2 large eggs
- ¼ cup milk
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup chopped scallions (optional)
- Cooking oil for frying (such as vegetable or canola oil)
Instructions
- Combine the dry ingredients: flour, baking powder, salt, and pepper in a large mixing bowl.
- Whisk together the eggs and milk in a separate bowl until well combined.
- Gradually pour the wet mixture into the dry ingredients, stirring until smooth to form the batter.
- Fold in the corn kernels, shredded cheese, and scallions if using; the batter should be thick but scoopable.
- Heat about 2 inches of cooking oil in a deep frying pan or pot over medium-high heat until it reaches 350°F (175°C).
- Drop spoonfuls of batter into hot oil using a spoon or ice cream scoop, avoiding overcrowding.
- Cook for 2-3 minutes per side until golden brown and crispy, then remove with a slotted spoon and drain on paper towels.
- Serve hot with sour cream or spicy dipping sauce, alongside salad or chili if desired.
Notes
- Ensure corn is well drained to prevent soggy fritters.
- You can substitute cheeses with vegan or different varieties based on preference.
- Adjust seasoning to taste, adding chili flakes for spice if desired.
- For healthier options, bake or air fry the fritters at 350°F for 10 minutes or until crispy.
