- 1 can (15 oz) butter beans, drained and rinsed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook for 1 minute until fragrant.
- Add cherry tomatoes and cook for 3-4 minutes until softened.
- Stir in butter beans and cook for another 5 minutes, stirring occasionally.
- Mix in spinach and cook until wilted, about 2 minutes.
- Remove from heat and sprinkle with Parmesan cheese and basil.
- Season with salt and pepper to taste, serve warm.
Notes
Feel free to add a splash of balsamic vinegar or red pepper flakes for extra flavor. Serve with crusty bread or a fresh salad.
