- 1 lb (450g) store-bought gnocchi
- 1 cup fresh basil pesto
- 2 cups fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Grease a baking dish.
- Cook gnocchi according to package instructions, then drain.
- In a large bowl, combine cooked gnocchi, pesto, spinach, salt, and pepper.
- Transfer mixture into the baking dish, spreading evenly.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 20-25 minutes until bubbly and golden.
Notes
Use fresh basil pesto for the best flavor. Feel free to add cooked chicken or pine nuts for extra texture. Serve hot with a side salad.
