- 1 pound Italian sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cooked pasta
- 1/2 cup shredded Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat and cook the sausage until browned. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery until tender.
- Return sausage to the pot, add Italian seasoning, salt, and pepper.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream and cooked pasta, cook for another 5 minutes.
- Serve hot, garnished with Parmesan and parsley.
Notes
- You can substitute with turkey sausage for a leaner option.
- For a thicker soup, add a cornstarch slurry during simmering.
