  • 1 lb Italian sausage
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 package (9 oz) refrigerated tortellini
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned. Remove sausage and set aside.
  2. In the same pot, add chopped onion and sliced carrots. Cook until vegetables are tender, about 5 minutes.
  3. Add minced garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil. Reduce heat, add cooked sausage, dried thyme, salt, and pepper.
  5. Stir in tortellini and cook according to package instructions, usually about 3-4 minutes.
  6. Add fresh spinach and cook until wilted, about 2 minutes.
