Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • For the glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together butter and sugar until fluffy.
  3. Add eggs and vanilla; mix well.
  4. In a separate bowl, whisk flour, baking powder, salt, and cinnamon.
  5. Gradually add dry ingredients to wet mixture, mixing until combined.
  6. Divide dough in half, roll each into a rectangle, and spread with cinnamon mixture if desired.
  7. Roll up each rectangle tightly, slice into 1/2-inch thick cookies.
  8. Place on prepared baking sheets and bake for 10-12 minutes or until golden around edges.
  9. Mix glaze ingredients and drizzle over cooled cookies.

  • You can add a sprinkle of extra cinnamon or brown sugar before rolling for more flavor.
