- 1 cup (226g) unsalted butter, melted
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 2 cups all-purpose flour
- 1 tsp baking powder

- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
- In a large bowl, beat together the melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon juice and lemon zest.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing gently until just combined.
- Pour the batter into the prepared dish and smooth the surface. Bake for 25-30 minutes until edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar if desired.
Notes
- Ensure not to overmix the batter to keep the bars tender.
- For a more intense lemon flavor, add extra lemon zest.
