Instructions
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and milk until smooth and well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- In a small bowl, combine brown sugar and ground cinnamon for the filling.
- Divide the dough into two parts. Roll each into a flat rectangle between parchment paper.
- Spread the cinnamon filling evenly over each rectangle, then carefully roll into logs. Slice into ½-inch thick cookies and place on a baking sheet lined with parchment paper.
- Preheat oven to 350°F (175°C). Bake cookies for 12-15 minutes until golden brown around the edges. Allow to cool slightly before transferring to a wire rack.
Notes
- For softer cookies, store in an airtight container with a slice of bread.
- These cookies can be frozen before baking; wrap tightly and freeze for up to 3 months. Thaw before baking.
- Adding chopped nuts or raisins to the cinnamon filling adds extra flavor.
- Optionally, dust with powdered sugar or drizzle with glaze for added sweetness.
